GF month

Typically, I keep our personal issues within our home, or privately ask family and close friends for prayer/Biblically sound advice. This just seems different, though. I know many of you face similar issues or know folks who do, and shared resources will make this journey easier.

In a nutshell, I began, in November,
seeking medical advice for some chronic stomach issues. After a referral to a GI specialist in December, and some bloodwork and tests, I was diagnosed with lymphocytic cytosis. Since diagnosis, we have completed several unsuccessful med trials. As of last Thursday's visit, I am taking 12 pills daily for my symptoms, 3 different meds. I've also been limiting milk and soft cheeses for a month. This month, in addition to the new med changes and additions, I am going to eat gluten free foods only. Blood tests ruled out Celiac disease, but Dr still believes I may have a strong gluten intolerance or sensitivity. If that's the case, I could stick with diet changes and slowly reduce medicines, which would be awesome!
Transitioning to gluten free eating, cold turkey (which I've eaten a lot of the past few days!), has been challenging. I had been ingesting mega amounts of gluten each day and, quite possibly wrongly blaming dairy counterparts. For example, it may be the cereal making me sick, rather than the milk...or the noodles, rather than cheese. Only time will tell. We made a lengthy trip to WalMart today and read hundreds of labels, but didn't find a ton of ideas before growing weary for one day. Any tasty product ideas and/or recipes would be so appreciated! In the grand scheme of things, I am too blessed to complain! But I believe God cares about even this and will provide the resources I've specifically prayed for! I'm also praying I will crave Him, rather than the foods I've had to eliminate!
